I know what you are thinking – never once have I posted a recipe on this blog.
You know I know how to drink.
But yes, I can also cook.
And I’m not too shabby at it.
Here’s the thing though.
For the last, oh, say, three months, I’ve had no desire to cook.
My answer to “What’s for dinner?” in the last three months has been, “Ummmm….frozen chicken sandwiches?”
Said with a tired smile on my face in hopes they’ll let me get away with it.
They never do.
They want real meals.
Who can blame them?
But see, I haven’t had time to make a menu, and then the grocery list for the menu, and then go to the store and get all the items on the list.
So frozen chicken sandwiches it is.
Until a few weeks ago…
A few weeks ago, I found out about Blue Apron.

Everything comes in a refrigerated box so that if you aren’t home right when your meals are delivered, the ingredients will still stay fresh. And did I mention shipping is free?
To put it simply, you are cooking a gourmet meal at home without the cost of a restaurant or getting all fancied up to go out. Y’all know my circus can’t handle nice restaurants.
We opted to go with their family plan and got one delivery a week that consisted of two meals. Our meals were Baked Sausage, Mozzarella and Rigatoni Pasta with Cucumber Salad and Za’atar-Spiced Chicken with Roasted Cauliflower. Both were phenomenal.
The kids and Grunt Labor thought the whole concept was really cool.
So cool that I even suckered them into helping out.
Yes, 17 and 18 year old boys are capable of helping in the kitchen, contrary to popular belief.
Each recipe card is in full color, detailed, and tells you exactly how to prepare the dish and when to do what so that you get dinner on the table faster.
I wish I could make the screen scratch n’ sniff so you would know just how much my kitchen smelled like a great Italian restaurant while that sauce was simmering.
Besides the fact that these meals take 40 minutes or less to dish up, one of my other favorite features is that they are only 500 – 700 calories per person – for those of us trying to make it out of our stretchy pants before summer fully comes around. 😉
Surprisingly, every one of my picky eaters gobbled up the pasta.
And I think they really liked it.
